Snow crab (or "opilio") has long been sought after as seafood where it was originally found. In the Barents Sea, fishing for snow crab began in 2012, after the first individual was discovered in 1996.

Crabs tend to accumulate environmental toxins in their brown meat, and it has been shown that the toxin can also leak into claws and legs during boiling and thawing (Wiech et. al. 2017).

Therefore, it is important to get an overview of the content of foreign substances in snow crab and how it is affected by different processing methods.
