Livar Frøyland obtained his PhD in 1996 within clinical biochemistry at Haukeland University Hospital, the Faculty of Medicine and Dentistry, University of Bergen, Norway. In his PhD he revealed some of the underlying mechanisms for the beneficial effects of the very long-chain n-3 polyunsaturated fatty acids.

In 1997 Frøyland was employed at the National Institute of Nutrition and Seafood Research (NIFES), formerly known as the Institute of Nutrition, Directorate of Fisheries.

From 2001- August 2011 Frøyland was head of the research programme Seafood and health. Since September 2011- Frøyland holds a position as Director of Research at NIFES.

Frøyland is also professor in Medicine (nutritional physiology) at Department of Biomedicine, and a lecturer in nutrition at the Faculty of Medicine and Dentistry, University of Bergen.
Frøyland has been a member of the Panel on Nutrition, Dietetic Products, Novel Food and Allergy, the Norwegian Scientific Committee for Food Safety (VKM), since it was established in its new model in 2004.

Frøyland was a co-author on the VKM reports A comprehensive assessment of fish and other seafood in the Norwegian diet (2006) and Benefit-risk assessment of fish and fish products in the Norwegian diet – an update (2014). Frøyland was leader for the VKM report “Evaluation of negative and positive health effects of n-3 fatty acids as constituents of food supplements and fortified foods in 2011.
